We are almost to the new year, and most of us have been sidelined by some unexpected occurrences. This is a great time to set aside an hour or so of uninterrupted time to do a quick review of what you want to be different in 2021. Use this time to reflect and evaluate your goals and your progress and to plan.

This recipe comes from one of my "go-to" recipe websites. Everything I've made of hers has been delicious and turned out great. I'm going to make this one for Thanksgiving this year. I like that you can make it ahead of time. 

Souffle:

  • 1/2 cup butter, room temperature
  • 3/4 cup light brown sugar
  • 3 cups mashed sweet potato (canned or bake 2-3 medium sweet potatoes)
  • 2 large eggs
  • 1/3 cup milk
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt

 

Topping:

  • 1 cup chopped pecans
  • 3/4 cup light brown sugar
  • 1/2 cup all purpose flour
  • 1/4 cup butter, room temperature
  1. Coat a 2- quart baking dish with nonstick spray. Set aside.

We brought the buyers to this great Sun City home. They are anxious to get in, and I can't blame them! Sun City has so much to offer. This great 55+ community has everything you could possibly look for in a community. One thing I really love about selling in Sun City is that all my buyers know exactly what they want and they know they are going to get it by living in here.

I can't wait for my buyers to move in and get started on living the easy life. I would start in the Carolina Room!
